Description

Single-varietal Chétoui from northern Tunisia, harvested early and cold-extracted below 27 °C within 12 hours of picking. Free acidity under 0.4 %, low peroxide value and a high polyphenol content. A powerful profile with a noble bitterness, prized raw as a dressing and as a finishing oil.
